One of my favorite things about fall is that it is the perfect time of year for crockpot cooking.

I have been craving pork chops with mashed potatoes and gravy, but just couldn't find a recipe that really spoke to me, so I decided I would just try something new and I personally think it came out very well. I will also add that I don't eat much salt due to my health, so definitely add salt to your liking.

What you will need:

  • I used 10 small but thick boneless pork chops
  • 6 Tablespoons of brown gravy mix
  • 1 0.7oz pack of Italian dressing mix
  • 1 small white onion, chopped
  • 2 cups HOT water
  • 2 Tablespoons of Avocado oil (or your oil of choice)


INSTRUCTIONS:

1.) I heated a large skillet til it was about ready to smoke, then added the oil to sear the chops. 3-5 mins per side. Just long enough to get a nice brown crust on it. **This is where you can salt your chops if you would like to.
After Browning the chops, I removed them from the pan and set them in the crockpot to stay warm. I had the crockpot on high to warm up.



2.) I left the fat, oil and browned bits in the pan for flavoring then added all of my diced onion to the pan and cooked them til they were just softened. **Remember they will continue to soften in the crockpot. You can also salt the onion here if you'd like. 
 The powders I used for the gravy were just plain old brown gravy mix and some Italian Dressing mix.



3.) I added the whole package of Italian mix and 6 Tablespoons of the brown gravy mix directly to the pan and mixed with the onions til they were all coated. (You dont have to do that, I just do.



4.) I then added 2 cups of HOT water and whisked continuously until the powders were completely dissolved and the gravy had thickened. 



5.) After turning the heat off on the gravy I just poured it over the top of the chops in the crockpot and let them cook **still on high** for another 3 hours. 


I served with Homemade mashed potatoes and some green beans.
